Our review

Victorinox's Fibrox line is a staple in professional kitchens, and the 8-inch flexible fillet knife is the version anglers most often keep at home. The stamped stainless blade is thin and very flexible, so it follows the skin closely and leaves little meat behind.

The Fibrox handle is a textured thermoplastic that stays grippy when wet. The knife is light and nimble rather than heavy-duty.

There is no sheath, so this knife lives in a kitchen drawer or block, not a tackle bag. Victorinox sells a leather sheath for 8-inch blades separately (about $17 when we checked), but leather isn't ideal near water. If you clean fish on the water, choose a knife with a plastic sheath.

On Amazon, buyers describe it as a professional-quality knife that stays sharp for a long time and is easy to touch up on a honing steel. They also praise the flex, the grip when wet and the value. The most common wish is that it came with a sheath.
